Ethel’s BLT Salad
In de summer when de tomatoes come in, seems like everybody wants a bacon lettuce an’ tomato sandwich. Dey is right smart work when you have a passel of mouths t’ feed. I came up wit’ de idea t’ put it all together int’ a big salad. It’s jest as good an’ a whole lot easier to eat.
Serves 6
3 or 4 fresh ripe tomatoes
Head of Romaine lettuce
Homemade mayonnaise
12 strips Bacon fried crisp
Salt and Pepper to taste
2 cups of croutons- make first so dey can cool
Croutons: Slice de white bread I done give you the recipe fo’ into 6 slices like you was makin’ sandwiches.
Spread mayonnaise on each slice an’ put ’em in a 350 oven., -keep a eye on ’em dey burn in de bat of an eye,- ’til de is good’n brown. Let cool
Chop tomatoes into bite size pieces.
Fry bacon until right crisp, let cool then cut up into bite-size pieces.
Tear off any leaves dat are bruised split head in half an’ chop ‘cross fo’ ’bout half inch pieces
Mix lettuce, tomatoes, and bacon in a bowl set aside to make dressing.
Dressin’: Take ’bout a cup of mayonnaise an’ add two big spoons of red wine vinegar mix up good.
Add croutons t’ de lettuce mixture, and a good shake of salt and pepper, our on de dressing’ an’ serve.
