Mango Avocado Salad

Miz Ginny’s right partial to avocado. She’ll eat ’em any which way. I can’t say I like ’em like she do, but dis here salad is mighty good on a hot summer’s day. Da is unless she finds one of dem papayas. I hate to ruin a good salad wit’ one of dem thangs, no sirree! She like ’em an’ dey make it look real purty!

                                                             Mango Avocado Salad

  • 1 head of Boston lettuce
  • 1 avocado
  • 1 mango
  • 1 bunch of green onions
  • Wash lettuce den toss in clean pillowcase t’ dry.  (Mary Note: Ethel didn’t have a salad spinner in her day. I suspect she would have continued to use her pillowcase method, but you never can tell. She might have loved  lettuce spinners.) Shake good. I keeps a pillowcase jest fo’ dis purpose. Put case int’ de icebox t’ cool and crisp up.  When ready t’ serve tear de lettuce int’ pieces.  Peel avocado an’ de mango, cut int’ cubes. Chop scallions. Mix all toget’er. Dress with Oil & Vinegar dressin’.

Oil & vinegar dressing

  • ¼ cup vinegar
  • ½ t. Paprika
  • ½ t. Sugar
  • 1 t. dry mustard
  • 1 t.  Salt
  • ¼ t. Pepper
  • ½ t. Dried herbs – thyme, or chervil
  • ¾ cup oil

Pour vinegar in a jar wit’ a lid, add next six ingredients, put on top and give it a good few shakes.  Then add oil. Shake before serving.
