Potatoes, Apples, Onions & Cabbage
De Mackey chil’ren doan much like cabbage. Miz Ginny is right partial to it. I made up dis here recipe t’ stave off a fight ’bout eatin’ yo’ vegetab’es. When Sallee said “Ethel can even make cabbage taste good. She’s a genius I was right proud of myself . I think it’s good too, an’ if yo put po’kchops wit’ some salt an’ pepper on top of the apples, you got yo’self a mighty tasty one-dish dinner. Without de po’kchops, it goes good with a roast, too.
Serves 6
- 2 pounds potatoes peeled an’ sliced thin
- 3 cooking apples cored an’ sliced
- 2 good-sized onions sliced
- ½ head of white cabbage shredded
- salt & pepper
- 1 bay leaf crumbled fine
- 1 big pinch of thyme
- a small handful of chopped freshly parsley or a big pinch of dried
Grease a deep-sided casserole. Mix de herbs up toget’er. Put all of de potatoes on de bottom o’ de dish. Sprinkle wit’ salt an’ pepper an’ a little of de mixed up herbs. Add cabbage. Sprinkle wit’ more salt an’ pepper an’ herbs. Top de cabbage wit’ de onions, more salt an’ pepper an’ herbs. Finally, add a layer of apples wit’ a last sprinkle of herbs.
Cook in a 350 oven for at least 45 minutes covered. Uncover and continue cooking for fifteen minutes more.
